About This Coffee

A washed coffee from the Yirgacheffe district in Southern Ethiopia's Sidamo region, widely recognized as one of coffee's birth regions. Grown by smallholder farmers on fewer than 5 hectares using traditional, organic-by-default methods with no chemical fertilizers or pesticides. The coffee is made from local landrace (Ethiopian heirloom) varieties, selectively handpicked, pulped, fermented for 72 hours, washed, and dried on raised beds for 12–15 days. Flavor notes include tangy acidity, caramel, and jammy raspberry.

Early Bird Coffee

Jean Baptiste Bernadet left the corporate IT world to pursue his coffee passion and in 2016 opened Early Bird, a micro roastery tucked into a 15 square meter space in Paris's 9th arrondissement near Grands Boulevards. The tiny cafe seats six to eight people at most and roasts on site right behind the bar, putting the entire process on display for anyone who walks in. Single origin specialty coffees are roasted light to medium to let origin characteristics shine, with beans sourced from Ethiopia, Colombia, Kenya, Guatemala, and Costa Rica and brewed through espresso, V60, Chemex, and batch brew methods. The operation is decidedly coffee focused with only pastries from local Parisian bakeries rounding out the menu. Early Bird has become a popular gathering spot for the local creative community and is a fixture in Paris specialty coffee guides.
