This coffee comes from the Chelchele washing station in the Chelchele kebele (village), located in the Kochere woreda (district) within the Yirgacheffe region of Ethiopia. The coffee is grown at 1900-2400 meters above sea level. It features Heirloom varieties and is processed using the natural method. The coffee is grown by smallholder farmers who typically do not use fertilizers or pesticides. Chelchele coffees tend to have a nice backbone of sweetness from toffee and soft nuts like almond, with floral and citrus overtones.
Based in Zürich, AILA was founded with the mission to build a complete coffee culture rather than just a roastery. They are deeply committed to direct trade, fostering strong relationships with their producers to ensure quality and fairness. Their roasting approach is designed to tell the story of the beans and the people behind them.
