About This Coffee

A naturally processed coffee from the Gara Sole Washing Station, located in the Hamesho Borona kebele of Ethiopia's Sidama zone at 2,200m above sea level. Produced by Testi Coffee and sourced from approximately 400 independent outgrowers farming organically on small plots, averaging under one hectare. The Heirloom variety cherries are dried on raised African beds for 30 days under shade netting to promote slow, even drying. Part of Testi's Premium Cherry Selection (PCS) program, ensuring only the ripest cherries are selected for exceptional cup complexity.

Mamam was founded in 2022 in Szczecin, Poland, by Adam Rosołowski and Martyna Sikora, bringing together a team with deep roots in the specialty coffee world. Head roaster Michał Sowiński brings 16 years of industry experience, including time as head roaster and green coffee buyer for Berlin roasters. Adam is a certified Q Arabica Grader and competition judge. The roastery focuses on premium grade specialty coffee, with most offerings scoring above standard specialty thresholds. They source from origins across East Africa and Latin America, guided by values of quality, transparency, and humility. Part of their mission is building broader consumer awareness of what specialty coffee can be.
