This is a single-origin coffee from the Halo Bariti cooperative in Ethiopia's Gedeb micro-region within the Yirgacheffe growing area. Grown at an extreme altitude of 1850-2300 meters by 700 smallholder farmers, this coffee is made from Heirloom varieties (74110 and 74112), which are JARC disease-resistant selections from the 1970s. The beans are washed processed with a 36-72 hour fermentation, followed by soaking and 9-12 days of drying on African raised beds. The roast level is light-medium, designed to preserve floral and fruit aromatics. The cup profile features wild ginger flower, sweet orange, honey, white blossoms, and citrus, with a clean, sweet, and juicy sensory experience.
