This coffee is a Gesha variety from the El Oasis farm, located in the Tolima region of Colombia at 2150 meters altitude. It undergoes a 60-hour submerged fermentation in clean water tanks, followed by a thorough washing and 10 to 14 days of drying in an airflow-controlled environment. The flavor profile is characterized by notes of jasmine, white peach, honey, and muscat grape, offering a clean, structured, and expressive cup with a crisp finish.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
