It is a CM Washed (Carbonic Maceration Washed) processed coffee, where cherries are hand-selected at peak ripeness, fermented in tanks with circulating carbon dioxide, dried on shaded raised beds, and rested for 60-90 days. The coffee offers delicate flavors of lilacs and tangerine with a thin body and subtle florality.
