Processed using Extended Carbonic Maceration (CM) Natural method, where ripe cherries are hand-picked, floated to remove defects, sealed in stainless steel tanks with carbon dioxide to control fermentation, then dried on raised African beds for three weeks. The coffee displays hibiscus, cranberry, and pomegranate flavor notes with a wine-forward, expressive character. Roasted light with moderate development to highlight terroir.
