About This Coffee

Finca La Salvaje is a washed coffee from Honduras (Marcala, La Paz) produced by Fabio Caballero Jr. Grown at 1750 masl and listed as the Java variety, the cherries were handpicked at peak ripeness (21° Brix), given a short 12-hour fermentation, pulped and washed, then dried 12–15 days on raised beds and stabilized in parchment before milling. The cup is described as delicate with panela and acacia-honey sweetness, bright acidity, and notes of white tea and orange peel.

Julie and TJ Fairchild's 2003 leap of faith has evolved into Pittsburgh's most thoughtfully community-centered roasting operation, now spanning seven locations with 65+ employees roasting 2,500 pounds weekly. Their philosophy, inspired by a Walt Whitman poem, centers on creating "solid ground for all" through coffee that serves as genuine neighborhood infrastructure.
