This coffee is produced by Marie Jackie Mercer Vallarino at Finca Los Cantares in the Chiriqui region of Panama, grown at an altitude of 1500-1595 meters. It is a washed process coffee consisting of Caturra and Catuai varieties. The medium roast profile offers a rich, chocolate-forward experience with tasting notes of chocolate lava cake, pecan, and raisin. This lot is characterized by a notable, long-lasting finish and a layered, fruit-driven sweetness.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
