This coffee is from Finca Meridiano in the Pichincha region of Ecuador, produced by Mario Hervas at 1,400-1,700 meters altitude. The variety is Typica Mejorado, a natural meeting point between Bourbon and Ethiopian landrace genetics unique to Ecuador. The coffee is dry-fermented washed, with ripe cherries hand-selected, pulped, and dry-fermented for around twenty hours before being washed with fresh spring water and slowly dried on raised beds in protective polytunnels. The flavor profile features white florals, ripe watermelon, raspberry sweetness, and honeysuckle with a long complex finish. Harvested May-August 2025.
