The coffee is Typica Mejorado processed as an anaerobic washed lot—cherries were floated, fermented in cherry, pulped, anaerobically fermented, then fully washed and dried in a greenhouse. Tasting notes highlight mango and grapefruit with a layered tropical profile and a complex spice reminiscent of nutmeg.
