A Geisha variety coffee from Colombia, processed using a unique experimental multi-stage fermentation method. Selected coffee cherries undergo 24 hours of fermentation in a tin barrel, followed by depulping — the pulp is then mixed with yeast and ferments for an additional 72 hours. This mixture is combined with the green coffee and placed in anaerobic conditions for another 72 hours. Tasting notes include lime, chocolate liqueur, and rose jam. Prepared as a filter coffee.
