About This Coffee

A Gesha variety coffee produced by fifth-generation farmer and Q-grader Newerley Gutiérrez at the Monteverde farm. Processed using a proprietary "Blue Natural" method: cherries undergo 24 hours of oxidation, followed by 70 hours of anaerobic fermentation in sealed bins with native microorganisms and yeasts, totaling 94 hours of fermentation. The "blue" name refers to the characteristic blue color the beans develop during fermentation. Flavor notes include black cherry jam, rose, jasmine, tangerine, and wild honey.
