A single-origin coffee from Piendamó, Cauca, Colombia, produced by Wilton Benítez at Granja Paraíso 92 at 1950 m.a.s.l. The Red Bourbon variety undergoes a complex anaerobic process with double fermentation: whole cherry fermentation with added yeast, followed by a second fermentation with natural coffee fruit juice (mosto). The coffee is then decaffeinated via the sugarcane ethyl acetate (EA) method. Light roast with tasting notes of lemongrass, green mandarin, and lemon balm.
