This Caturra from Granja Paraíso 92's La Macarena farm in Cauca, Colombia is grown at 1900m elevation. Processed using Anaerobic Thermal Shock method involving ozonated water sterilization, three sequential anaerobic fermentations (52, 48, and 68 hours respectively) with custom yeast culture, and two thermal shock washes. Light roast whole bean with tropical fruit-forward flavor profile.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
