About This Coffee

This coffee is produced by the Hachi Project, a research initiative founded in 2024 by Diego Bermudez (Colombia) and Allan Hartmann (Panama). The coffee undergoes a unique Low-Caf process where freshly washed beans are fermented in a sealed tank with Cascara - a natural extract from the coffee's own fruit - before caffeine is removed using hot water and a carbon filter in a closed-loop system. This method preserves the delicate floral and citrus notes characteristic of the Geisha variety, while delivering flavours driven by the Colombian terroir.
