About This Coffee

A washed coffee from the Asman Gayo Mill in the Pegasing district of Takengon, in the highlands of Aceh, northern Sumatra. Operated by Asman Arianto, the mill sources cherries from smallholder farmers in the villages of Pantan Musara, located within a volcanic highland system near Lake Toba. The lot comprises the Ateng, Bor Bor, Catimor, and Timor varieties. Cherries are depulped and fermented in open tanks for up to 36 hours before being washed and dried on raised beds, parabolic dryers, or tarps. Flavor notes of baked apple, praline, dried lime, and red grape. Roasted as an espresso.

Kris and Sophie Schackman founded Five Elephant in December 2010, opening their original cafe at Reichenberger Strasse 101 in Berlin Kreuzberg while establishing a separate roasting facility on Glogauer Strasse. Head roaster Wojtek Białczak, who placed fifth at the 2019 World Barista Championship in Boston representing Germany, oversees quality on a Diedrich roaster, ensuring every batch meets exacting standards. The roastery offers espresso, filter, and omni roast profiles, with their Meridian Collection showcasing diverse terroirs and varietals from Ethiopia, Guatemala, Kenya, and the Mogiana region of São Paulo, Brazil. Every coffee is cupped after roasting for quality control and flavor profiling, a discipline that reflects their commitment to consistency across four Berlin cafe locations. Direct trade relationships built through origin travel underpin their sourcing, and wholesale distribution extends their reach to partners around the world.
