This coffee is from the Rantekarua Estate located in the Bittuang district of Tana Toraja Regency, South Sulawesi province on the island of Sulawesi, Indonesia. The 3000-acre estate is managed by PT Sulotco Jaya Abadi and features organic cultivation using manure from over 2000 sheep as fertilizer. The estate includes variety trials for testing different cultivars. During harvest, cherries are picked and transported to the Sulotco processing facility in the Bolokan valley where they undergo natural processing. Cherries are floated for selection and washed, then moved to covered, raised beds and dried in successively thicker piles over a period of 20 days or more until reaching 11 percent internal moisture.
