About This Coffee

This certified organic single origin Arabica coffee is sourced from the Ijen Plateau in Eastern Java, Indonesia. The beans are Typica variety grown by smallholders in Curah Tatal and Kayumas villages at 4,000 feet elevation in volcanic loam soil. The coffee is processed using Giling Basah, a traditional Indonesian wet-hulling method that removes the parchment layer before sun drying. This medium roasted coffee features flavor notes of toffee, honey, toasted almond, and vanilla pudding with a silky body. The coffee is Rainforest Alliance certified.

Cosmic Coffee Company was founded in 2008 in Honolulu by Carlos Negrete and Jolynn, then relocated to Santa Clara, California in 2012. Negrete began roasting in 2007 and became the first barista in Hawai'i certified by the International Academy of Specialty Coffee, later adding SCA certifications in craft roasting, golden cup standards, and green coffee defect identification. The roastery sources exclusively specialty grade green beans that meet organic, shade grown, and Rainforest Alliance standards, developing individual roast profiles through multiple test batches that account for variations in density, moisture, and origin. Cosmic operates as a deliberately small, minority owned family business of three, selling at Bay Area farmers markets and through a weekly open door at their Santa Clara facility. The operation also includes a handcrafted organic tea program developed by Jolynn, who brings over 20 years of culinary experience to her original blends.
