This Geisha coffee from Jhoan Vergara's Las Flores farm in Huila, Colombia is grown at 1780 meters altitude. The coffee undergoes a Mosto Thermal Shock Washed process featuring 12 hours of cherry oxidation, 24 hours of submerged fermentation using must, 60-hour anaerobic fermentation post-depulping, and a 30-minute thermal shock at 50°C before mechanical drying. The light roast displays tropical and complex characteristics with passion fruit, grape, rose, and pineapple notes in a creamy, silky cup with a perfumed finish.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
