About This Coffee

A bold specialty decaffeinated coffee from Finca Las Flores in Colombia. This Pink Bourbon varietal undergoes an intricate post-harvest process including 24 hours of anaerobic fermentation, followed by 12 hours of oxidation, then another 36 hours of anaerobic fermentation after pulping. A thermal shock at 50°C is applied for 15 minutes to stabilize sugars and enhance profile clarity. The coffee is mechanically dried for 36 hours and then decaffeinated using natural ethyl acetate derived from local sugar cane by Descafecol, a Colombian decaffeination specialist. The result is a funky and unusual decaf with surprising complexity.
