From Finca Las Lajas in Costa Rica's West Valley region, this coffee is produced by third-generation farmers Oscar and Francisca Chacón at 1400–1600 meters altitude. It is a White Honey processed coffee using Catuaí and Caturra varieties, harvested in November–December. The cherries are de-pulped immediately after sorting and dried on raised beds, then on a covered patio. Flavor notes include red grape, toffee, and pecan. Omni-roasted, it is suitable for espresso and a range of brew methods.
Named after the ancient Roman name for Lisbon, Olisipo Coffee Roasters was founded by Antony Watson and Sofia Gonçalves with a mission to honor their city's history of exploration. They see themselves as modern-day navigators, exploring the world to source unique and high-quality beans from small, independent producers. Their roasting style is dedicated to showcasing the stories and distinct flavors of these origins.
