This coffee is from Nicaragua's Jinotega region, specifically from Los Lajones estate managed by the renowned Mierisch Family. Grown at 1,000-1,250 meters altitude, this rare Laurina (Bourbon Pointu) variety is naturally low in caffeine (approximately 0.6-0.7%, half of typical coffee beans) without chemical processing. The beans are processed using natural sun-drying methods. The flavor profile features light fruit acidity with notes of cranberry and white grape, transitioning to maple syrup sweetness in the mid-palate, finishing with pure floral notes reminiscent of mineral water.
