This coffee is sourced from the Migu Estate in Yunnan, China, cultivated at altitudes between 1,450 and 1,600 meters. It is a blend of Catimor and Typica varieties, processed using anaerobic washed fermentation, which involves removing the cherry skin and some pulp mechanically before fermenting in an oxygen-deprived environment for 32-48 hours. The flavor profile includes notes of nougat, rum, raisins, caramel, vanilla, and plum.
