This coffee comes from Finca Aurora in Nicaragua, owned by the Ferrufino family who have produced coffee since 1992. The cherries are hand-picked and processed on the farm using an anaerobic washed method: cherries are sorted by flotation, anaerobically fermented in sealed tanks with mossto (juice and pulp) for 24 hours, then depulped and fermented for another 24 hours before being washed. Parchment coffee is dried on patios for approximately 15 days and rested for 10 weeks. The cup profile is round and sweet with caramel-like qualities and notes reminiscent of cherry and apricot.
