About This Coffee

This coffee is a rare Laurina variety from La Escondida farm in the Jinotega region of Nicaragua. The farm is owned by the Mierisch family, who have been cultivating coffee for five generations. Laurina, also known as Bourbon Pointu, is a natural mutation of Bourbon with approximately 50% less caffeine than other arabica varieties. The coffee is grown at altitudes between 975-1230 meters on a plot called Ojo de Agua, near a stream. The cherries undergo natural processing with a careful 5-day sun drying on concrete patio, followed by 27 days of covered drying on platforms with rotation three times daily, and additional aging. The flavor profile includes cocoa, almond, papaya, pear, and chocolate notes.
