A single-origin coffee from Finca Chelín in Candelaria Loxicha, Oaxaca, Mexico, grown at 1,800 meters above sea level. Produced by Enrique López Aguilar, this coffee features the Pluma Mejorado variety — a national adaptation of Typica with a denomination of origin and geographic indication recognized in Oaxaca. It undergoes a unique "Hidronatural Lavado" (Hydronatural Washed) process: cherries rest overnight, dry naturally in a patio for two additional days, then move to a greenhouse on day three, are rehydrated on day four, and finally processed as a traditional washed coffee.
