This is a Geisha Green Tip variety coffee from the Chombi plot located in the MIMA ESTATE farm in Alto Quiel, Panama, at the foothills of the Baru Volcano at 1800 meters above sea level. The plot covers approximately 1.5 hectares of volcanic soil and is managed with 70% shade. Harvested on December 26, 2023, the coffee underwent a dry fermentation cold natural process involving flotation, initial drying on African beds for 4 days to 45% humidity, followed by 3 days in Grain Pro bags for low-humidity fermentation, then 28 days of secondary drying in a dark dry room. This is a direct trade coffee from the Altieri family.
