This is a Geisha variety coffee from Finca Deborah in Volcán, Chiriquí, Panama, produced by Jamison Savage at 1950 meters above sea level. The coffee is processed using Natural Carbonic Maceration with a Washed Finish. This extreme elevation, shade-grown coffee is cultivated in volcanic, highly organic, nutrient-rich soils surrounded by rainforest and cloud coverage. The 2024 harvest features flavor notes of white floral, juicy peach, champagne, and vanilla. Finca Deborah was established in 2008 and was the first to commercially implement Carbonic Maceration in coffee processing.
Founded in 2011 by Birdie Chiu, whose decade of I.T. experience brought an eye for practicality and problem-solving to specialty coffee, Hazel & Hershey operates under a 'bean to cup' philosophy. Named after Chiu's two daughters, the roastery has evolved from equipment distribution into a comprehensive coffee company offering thoughtfully sourced beans, innovative products, and all-embracing services that elevate coffee beyond commodity status.
