Pastel Hour is a Chiroso variety from Finca Los Tres Mosqueteros in Antioquia, Colombia. The coffee undergoes a multi-day layered washed fermentation process where each day's harvest is added to the same tanks before being washed and dried slowly in solar parabolic dryers for 15 to 20 days. This process builds aromatic depth and sweetness while maintaining exceptional clarity. Tasting notes include mint, verbena, and purple florals.
