Sanctuary Coffee

About This Coffee

This Rosado variety coffee is grown by producer Jorge Mira at the family-run El Jaragual farm in Amalfi, Antioquia, Colombia, at 1,500 meters altitude. The farm is a biodiverse 150-hectare landscape with sustainable pine plantations, protected native forest, and shaded agroforestry plots. The coffee underwent selective hand-harvesting at 90% ripeness, careful floating, controlled oxidation, warm and cold-temperature washes for thermal contrast, and a slow drying phase before stabilization in GrainPro. The cup profile features bright raspberry acidity, juicy papaya sweetness, and a soft marshmallow finish. The coffee is clean, fruit-forward, and showcases the expressive character of the Rosado variety.

Sanctuary Coffee

Sanctuary Coffee was founded in 2021 by Marcus Wood and Rhian Nolan, both inspired by their experience adopting a rescue greyhound named Dionne. Marcus spent his entire adult life in the coffee industry, including a stint as Head of Coffee for a London social enterprise roastery, and channelled that expertise into building a business that shares 5% of total revenue with animal rescues across the UK. The roastery operates from a shared space with Old Spike Roastery in Peckham, London. Each blend is named after an animal supported by one of their six partnered sanctuaries, from Little Joe the pony to Fifty Three the pig. Since 2023, they have donated almost £15,000 to partnered rescue organisations, with full transparency reports published online.
