Colombia single-origin from Quindio region at 1610-1850 meters altitude, grown by Manuel López. Castillo varietal processed using a peach co-ferment method: cherries are harvested, floated, oxidized for 24 hours, dry pulped, then fermented for 72 hours in sealed containers with peach juice and yeast before stabilization. Flavor profile features fruit and peach notes with green bitterness in the finish.
