This coffee is from the Sidamo region in southern Ethiopia, grown at 1800-2000 meters altitude by smallholder farmers. It is a washed process coffee featuring Heirloom varieties. The beans are hand-picked, fermented for 24-36 hours, and sun-dried on African beds for 10-15 days until reaching 12% humidity. Harvested between November and December, this selection is called Ato Tona. The cup profile features notes of cacao, apple, and honey with bright acidity, medium body, and clean floral or fruity characteristics. It has an SCA score of 85 points.
