Tanzania — Edelweiss Estate (Batian)

This coffee is a single origin Tanzania from Edelweiss Estate, featuring the Batian cultivar. Batian was first developed at Kenya's Coffee Research Foundation through back-crossing SL28 with Sudan Rume to improve yield and disease resistance while maintaining a clean, sweet cup profile. The coffee thrives in high-altitude volcanic soils. This lot undergoes a controlled pre-fermentation for complexity, followed by measured dry fermentation to maintain clarity and sweetness. After washing, the coffee is slowly dried on raised beds, starting in cooler shaded conditions before gradually moving into more sun to protect the coffee's structure while developing its inherent qualities.
