About This Coffee

This decaffeinated coffee is cultivated by an indigenous Colombian women's farming cooperative. The beans are processed using the cane sugar method, where producers use glacier water from the Nevado del Ruiz volcano and byproducts of local cane sugar cultivation to produce a quality decaffeinated coffee. The method removes caffeine while preserving the coffee's flavor characteristics.

Structure Roasters

True to its name, Structure Roasters takes a systematic, data driven approach to coffee roasting from its base in Montreal's Mile End. They roast on a Giesen with Cropster software and refractometers in a space that functions as much as a training facility as a production roastery. The focus is on single origins from Ethiopia, Kenya, Colombia, Guatemala, and Costa Rica, with precise, scientific methodology guiding every profile. SCA certified courses in roasting, brewing, and barista skills make education a central pillar of the business, alongside regular cuppings and professional development workshops. Structure supplies specialty cafes across Quebec and is known within the industry for detailed roast profiles and transparent data sharing, with a clear mission to develop the next generation of coffee professionals.
