A single origin Colombian coffee produced by Felipe Trujillo at Los Pinos farm in Santa Barbara, Antioquia, at altitudes between 1920–2050 masl. Made exclusively from the Castillo variety, this coffee undergoes a two-phase anaerobic natural process: 160–170 hours of anaerobic fermentation in closed tanks followed by drying on African beds. The result is a light/medium roast with bright tropical fruits, a winey mouthfeel, and tasting notes of blackberry, pomegranate, pear, cacao nibs, and winey characteristics. Cup score: 87.50.
