About This Coffee

This single-origin coffee is produced by cooperatives of small farmers in the Edido kebele, Ethiopia, who bring harvested cherries to washing stations in the neighboring Aricha kebele in the Bunna woreda, Gedeo Zone, Yergacheffe Region. The coffee features heirloom varieties grown at 1,850-1,880 meters above sea level. It is processed using the natural method, with cherries carefully dried on raised beds in the sun and turned frequently to ensure even drying. The flavor profile includes blueberry and stewed peach notes with tarty sweetness and medium body.

Hale Coffee Company

Dan Belliveau founded Hale Coffee in 2012 in Halifax, Nova Scotia, with the shortened name paying homage to the city itself and its Maritime coffee culture. The roastery and training lab on Gottingen Street serves as the heart of the operation, where a Probat handles both sample and production roasting in service of lighter profiles that let origin characteristics come through. Sourcing prioritizes direct trade and long term producer relationships, drawing from Ethiopia, Kenya, Colombia, Guatemala, Costa Rica, and El Salvador. As one of Atlantic Canada's leading specialty roasters, Hale runs SCA certified courses in barista skills, brewing, and sensory analysis, alongside regular public cuppings and education workshops. Seasonal releases highlight unique processing methods and rare varieties, reflecting a philosophy that positions coffee as a catalyst for community and connection in Halifax.
