Yunnan China Brandy Fermentation
The Coffee AcademïcsAbout This Coffee
A single origin coffee from Yunnan Pu'er, China, grown at 1500–1700 meters altitude. The varieties are Caturra and Castillo, processed using a Brandy Honey Process that involves anaerobic fermentation in an oxygen-free container for 24 hours, sun drying for 3 days, and an additional 48-hour fermentation stage. This process infuses the beans with brandy honey for a rich aroma and smooth finish. Tasting notes include brandy, plum, and Pu'er tea. Roasted at a medium level and freshly roasted in Hong Kong.
