This Gesha variety coffee is grown at El Triunfo farm in Santa Clara, San Agustin, Huila, Colombia at 1,750 meters altitude. The 5.5 hectare farm is entirely planted with coffee and managed by Yeni Anacona and Wilmer Moncayo. The coffee undergoes an anaerobic washed process where cherries are tumbled and fermented in plastic bags for 48 hours, then placed in a ceramic tank with minimal water for 36 hours before mechanical washing using only 0.3 liters per kilogram. After washing, the coffee is drained for 4 hours and dried for 18 to 22 days. The cup profile features wonderful florals, ripe peach, and dark berries with amazing structure and clarity, finishing with sparkling and effervescent notes.
