A single-origin coffee from Pitalito, Huila, Colombia — one of the country's most renowned specialty coffee regions. This lot combines beans from Finca El Diviso (Nestor Lasso) and Finca Las Flores (Johan Vergara), both known for precise processing and modern preparation methods. Grown at 1,700–1,900 m altitude and hand-harvested, using the Tabi and Yellow Colombia varieties. The coffee undergoes a two-stage fermentation: first aerobic, then anaerobic underwater. This controlled process highlights stone fruit and honey notes, resulting in a complex, clean, and precise espresso.
