This coffee comes from two farms in Huila, Colombia: Finca El Diviso, run by Nestor Lasso and his family at 1,780–1,900 meters altitude, and Finca Las Flores, run by Johan Vergara and the Vergara family at 1,700–1,790 meters altitude. The lot is a blend of Tabi and Yellow Colombia varieties. It undergoes a two-stage fermentation process: an initial aerobic phase followed by anaerobic fermentation under water, then a thermal shock with hot and cold water to preserve the flavor profile. Flavor notes include mandarin, peach, and vanilla. Roasted for espresso preparation.
