Founded in 2022, Synapse Torréfaction is a Parisian micro roastery that splits its operations between a roasting atelier in the Cour Damoye near Bastille and a coffee shop at 2 Rue du Fer à Moulin in the Latin Quarter's 5th arrondissement. The shop opened its doors in May 2023, giving the young brand a public face to complement its production space.
