This single origin coffee is from Yuan Yi Yuan Estate in Mangshi, Yunnan province, China. The coffee is a Catimor varietal grown at 1500 meters elevation. It undergoes anaerobic natural processing with enzymatic yeast fermentation, involving multiple stages: cherries are picked at peak ripeness, floated, soaked with enzymes to digest the pulp, semi-pulped, and then fermented with yeast in two stages - first under controlled temperature with oxygen, then without oxygen. The beans are dried at low temperature before hulling. The cup profile features rose, lychee, and peach iced tea notes. This is an espresso roast coffee.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch.
