This coffee is from Granja Paraiso 92 estate in Cauca, Colombia, at 1,850-1,950 meters altitude. The variety is Papayo (Papaya Cherry variety), characterized by unique elongated orange cherries with papaya-like aromatics. It undergoes Koji fermentation processing (P-20 batch), a Japanese-derived microbial fermentation technique traditionally used for soy products, which enhances the coffee's richness and sweetness. The flavor profile features white peach, orange peel, mango, strawberry, white peach yogurt, and subtle rose notes with a silky, smooth, yogurt-like texture.
