This is a decaffeinated Colombian coffee from the Santa Maria region in Huila, grown at 2,000 meters altitude. The coffee features Caturra and Typica varieties and undergoes the Swiss Water decaffeination process, which removes 99.9% of caffeine while maintaining the bean's origin characteristics. The coffee is processed using a 140-hour fermentation and dried using a parabolic dryer system. Roasted to an espresso roast level, it exhibits flavor notes of dark chocolate and cocoa.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch. Award winners at the 2019 Roasters Smackdown and 2023 ASCA competitions, they offer their signature Outsider Blend alongside rotating single origins and an automated pour over experience at the bar.
