About This Coffee

A washed Colombian coffee from the Cauca Department, sourced from smallholder members of the Asociación de Caficultores del Cauca (ACC), founded in Piendamó in 2016. Grown at altitudes between 1,700 and 2,100 meters above sea level on volcanic soils, this coffee features the Castillo variety — a modern Colombian Arabica bred for disease resistance. Processing is done on-farm with hand-harvesting, pulping, 12–18 hours of fermentation, washing, and drying. Cup profile includes notes of orange, nettle tea, and star anise.

Father's Coffee Roastery

RepublicThis Ostrava based family roastery was founded in 2017 by husband and wife duo Petr and Marie, who previously worked as baristas at Berlin's Five Elephant cafe. What started as a small family business with dad roasting and mom tasting while the kids watched has grown to a team of over 10 people with a Prague showroom opening in Bubenč. They roast on an American made five pound Diedrich IR-5 roaster with quality as their number one priority, offering regularly rotating harvests from around the world. Their Mothership espresso blend has become beloved by baristas and home enthusiasts for its full creamy body and milk chocolate flavor.
