This coffee is from the Ombligon variety, cultivated at 1700 meters altitude in Acevedo, Huila, Colombia. Produced by Jhon Wilmer Cuellar at Finca Las Brisas, a family-run farm operated by a fourth-generation coffee grower with over 15 years of specialty coffee experience. The coffee is processed using a natural method where whole cherries are carefully sorted and dried with the fruit intact, allowing sugars and fruit compounds to interact with the bean throughout drying. The lot features flavor notes of banana, pineapple, and caramel, showcasing the distinctive character of the rare Ombligon variety through deliberate cultivation and intentional natural processing.
