A Cup of Excellence Costa Rica lot from Monte Llano Bonito (Cartago) grown at 1670–1700 m. San Roque (SL28 mutation) processed using an experimental fermentation regimen; cherries were rested and fermented three days under shade, depulped, then fermented three more days. Light roast with notes of apricot, papaya, honey, cacao, sweet body, and crisp acidity.
