This light-roasted Costa Rican coffee is from Nelsyn Hernandez's 37-acre farm Fatima located in Tarrazú de León Cortez. The coffee undergoes red honey processing, where cherries are floated to remove damaged beans, depulped, and moved to patios to remove excess water while the mucilage remains attached to the bean. The beans are then mechanically dried to eleven percent moisture. The coffee features floral and fruit-forward aromas with vibrant berry notes balanced with bright citrus and a rich caramel finish. Flavor notes include citrus, strawberry, and caramel.
