About This Coffee

This decaffeinated coffee is from the Xinca community in Guatemala, representing 7 producers from the Cafe Colis Resistencia project. Grown at an altitude of approximately 1800 meters, the coffee is made up of Pache, San Ramon, and Catuai varieties. Cherries are picked at full ripeness and sorted by flotation, then by hand to remove overripe or underripe cherries. The coffee is mechanically depulped and fermented dry for 24 to 36 hours, then spread on a patio for 14 days for slow and even drying. This round and sweet coffee features flavor notes of chocolate, almonds, and cane sugar.

What began in 2014 as Le Pista Cafe Mobile, a bicycle powered coffee cart created by Maxime Richard, has grown into a Montreal roastery with three brick and mortar locations.
